A simple, creamy, and high-fiber overnight chia pudding made with just a few wholesome ingredients. Perfect for meal prep, this dairy-free and vegan-friendly breakfast keeps you full and satisfied without the fuss.

Ingredients

Scale
  • 1/3 cup chia seeds (black recommended)
  • 1 cup milk (unsweetened almond, oat, or dairy)
  • 1 tablespoon maple syrup (or honey)
  • 1 teaspoon vanilla extract (or vanilla bean paste)
  • Fresh or frozen berries (e.g., blueberries, mixed berries)
  • Sliced almonds or chopped walnuts (optional)
  • Hemp hearts or pumpkin seeds (optional)

Instructions

  1. In a medium bowl or pitcher, combine the milk, maple syrup, and vanilla extract. Whisk vigorously for about 30 seconds until fully dissolved.
  2. Pour in the chia seeds while whisking continuously to prevent clumping. Ensure seeds are dispersed evenly.
  3. Let the mixture sit for 5 minutes, then whisk again to break up any remaining clumps.
  4. Divide the mixture among mason jars or small bowls. Cover tightly with lids or plastic wrap.
  5. Refrigerate for at least 4 hours, preferably overnight (8-12 hours), to allow seeds to expand and hydrate.
  6. Before serving, give the pudding a gentle stir if liquid has separated.
  7. Top with fresh or thawed berries, nuts, and extra seeds.
  8. Serve cold straight from the fridge.

Notes

For best texture, do not skip the second whisk after 5 minutes. If the pudding is too thick in the morning, add a splash of milk. If too thin, let it sit at room temperature for 15 minutes or add more chia seeds next time. Store in the fridge for up to 4-5 days. Add fresh toppings right before eating to prevent sogginess.
