  • 1 large ripe peach, diced
  • 2 tablespoons honey
  • 1 teaspoon ground cinnamon
  • ½ cup (120g) plain Greek yogurt (full-fat or low-fat)
  • 1 cup (240ml) milk of choice (almond, oat, or cow’s milk)
  • ½ teaspoon vanilla extract (optional)
  • 1 tablespoon chia seeds (optional)
  • 1 teaspoon lemon juice (optional)

Instructions

  1. Wash and dice one large ripe peach into small cubes (about ½-inch pieces). If using frozen peaches, thaw and drain excess water.
  2. In your jar or bowl, combine 1 cup (90g) rolled oats, 1 teaspoon cinnamon, and 1 tablespoon chia seeds if using. Stir well to evenly distribute the cinnamon.
  3. Pour in ½ cup (120g) plain Greek yogurt, 1 cup (240ml) milk of choice, 2 tablespoons honey, and ½ teaspoon vanilla extract if using. Stir thoroughly until well combined and oats are fully submerged.
  4. Gently fold in the diced peaches, trying not to mash them to keep some texture.
  5. Add 1 teaspoon lemon juice if desired to brighten flavors and balance sweetness.
  6. Cover the jar or bowl with a lid or plastic wrap and refrigerate for at least 6 hours, ideally overnight.
  7. In the morning, stir the oats gently. If too thick, add a splash of milk to loosen. Adjust honey or cinnamon to taste. Top with extra peach slices or nuts if desired and serve cold.

Notes

Use rolled oats for best texture; instant oats get too soggy. Stir ingredients well before refrigerating to avoid clumps. Use ripe but firm peaches to maintain texture. Chia seeds are optional but add fiber and texture. Adjust sweetness after soaking as honey can lose intensity overnight. Store leftovers in sealed container up to 3 days. Reheat optional.
