  • 1/2 cup (120ml) unsweetened almond milk
  • 1/4 cup (60g) plain Greek yogurt
  • 1 medium ripe banana, mashed
  • 2 tablespoons (30g) creamy peanut butter
  • 1 scoop (30g) vanilla protein powder (optional)
  • 1 tablespoon (12g) chia seeds
  • 1 tablespoon (15ml) pure maple syrup or honey (optional)
  • Pinch of sea salt
  • Optional toppings: sliced banana, drizzle of peanut butter, dark chocolate chips, crushed peanuts, cinnamon

Instructions

  1. Mash the banana: Peel one ripe banana and add it to your jar or a small bowl. Use a fork to mash it until mostly smooth with some small chunks remaining.
  2. Add the wet ingredients: Pour in the almond milk and Greek yogurt. Add the peanut butter (stir well first if separated).
  3. Mix until smooth: Whisk or stir the wet ingredients together until the peanut butter is fully incorporated. Sprinkle the protein powder over the mixture and stir until no dry powder remains.
  4. Add the dry ingredients: Pour in the rolled oats, chia seeds, and a pinch of sea salt. Stir until all oats are coated.
  5. Sweeten if needed: Taste the mixture. If your banana was not very ripe, add maple syrup or honey and stir again.
  6. Seal and refrigerate: Put the lid on your jar and refrigerate for at least 4 hours, but overnight is ideal.
  7. Add toppings before serving: In the morning, stir the oats. If too thick, add a splash of milk. Top with sliced banana, a drizzle of peanut butter, dark chocolate chips, or other desired toppings.

Notes

For best texture, mix protein powder with liquid first to avoid clumps. Use room temperature peanut butter for easier mixing. Store toppings separately if meal prepping. Oats keep in the fridge for up to 5 days and can be frozen for up to 3 months.
