  • 8 ounces (225g) dark chocolate, at least 70% cocoa
  • 1 tablespoon (15ml) coconut oil (optional)
  • A pinch of sea salt flakes
  • 1 tablespoon powdered sugar (optional)

Instructions

  1. Prepare your cherries: If using fresh, pit them carefully using a cherry pitter or a small knife, removing stems and seeds. If frozen, thaw and pat dry to avoid water seizing the chocolate. (Approx. 10 minutes)
  2. Melt the chocolate: Set up your double boiler by simmering water in a saucepan and placing a heatproof bowl on top. Add the chocolate and coconut oil, stirring gently until smooth and shiny. Remove from heat. (About 5-7 minutes)
  3. Dip the cherries: Using a fork or dipping tool, submerge each cherry into the melted chocolate, letting excess drip off, then place it on the lined baking sheet. (Plan on about 2 minutes per batch)
  4. Chill and repeat: Pop the tray into the fridge for about 10 minutes to let the first chocolate layer set. Then dip cherries again for a thicker coat and return to chill. This double coating ensures that perfect chocolate snap. (20 minutes chill time)
  5. Add finishing touches: Before the second layer sets, sprinkle a tiny pinch of sea salt flakes on each cherry to bring out the flavors. Optionally dust with powdered sugar once fully set.
  6. Final chill: Let the bites set completely in the fridge for at least 30 minutes before serving. (Best after chilling overnight for flavor melding!)

Ensure cherries are completely dry before dipping to prevent chocolate from seizing. Double dipping creates a thicker, sturdier chocolate shell with a satisfying snap.
