Juicy Dad’s Italian Dressing Chicken

A simple and flavorful grilled chicken recipe marinated in Italian dressing, perfect for quick cookouts and family gatherings.

  • 4 skinless, boneless chicken breasts or thighs (about 1.5 pounds / 700 grams)
  • 1 cup (240 ml) Italian dressing (store-bought or homemade)
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon freshly ground black pepper
  • Pinch of salt
  • Optional: handful of chopped fresh parsley or basil for garnish

Instructions

  1. Rinse and pat dry the chicken breasts or thighs.
  2. In a large bowl, combine Italian dressing, garlic powder, onion powder, black pepper, and salt. Stir to blend.
  3. Place the chicken in the bowl or resealable plastic bag and pour the marinade over it. Coat well, seal, and refrigerate for at least 30 minutes up to 4 hours.
  4. Preheat grill to medium-high heat (around 375°F / 190°C). Lightly oil the grates.
  5. Grill the chicken for 6-7 minutes per side, depending on thickness, without flipping constantly.
  6. Check doneness with a meat thermometer (165°F / 74°C) or cut into the thickest part to ensure juices run clear.
  7. Remove chicken from grill and let rest for 5 minutes.
  8. Garnish with chopped parsley or basil and serve.

Notes

If you forget to marinate ahead, even 15 minutes on the grill with dressing adds flavor. Keep a spray bottle of water handy for flare-ups. For oven baking, cook at 400°F (200°C) for 20-25 minutes. Avoid pressing chicken on the grill to keep it juicy.
