An easy overnight meal prep breakfast casserole that combines savory sausage, sharp cheddar cheese, and a rich egg custard soaked into day-old bread. It bakes while you sleep for a stress-free, crowd-pleasing morning meal.

Ingredients

Scale
  • 1 loaf day-old bread (sourdough or rustic Italian), cut into 1-inch cubes
  • 8 large eggs, room temperature
  • 1/2 cup heavy cream
  • 1 1/2 cups whole milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 pound breakfast sausage (pork and sage blend)
  • 2 cups sharp cheddar cheese, shredded
  • 1 medium yellow onion, finely diced
  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Cut day-old bread into 1-inch cubes. If very stale, toast at 300°F for 5 minutes to dry out. Spread cubes evenly in a greased 9×13 inch baking dish.
  3. Heat a skillet over medium heat. Add sausage and cook until browned and crispy, breaking it up with a spoon (8-10 minutes).
  4. Add diced onion to the skillet in the last 3 minutes of cooking sausage. Drain excess grease.
  5. Stir in minced garlic and cook for 1 minute until fragrant.
  6. In a large mixing bowl, whisk eggs vigorously. Add heavy cream, milk, salt, and pepper. Whisk until uniform and slightly frothy.
  7. Pour egg mixture evenly over bread cubes. Press down gently to ensure bread is submerged.
  8. Sprinkle the browned sausage and onion mixture over the bread. Top with shredded cheese.
  9. Cover dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours or overnight.
  10. Remove from fridge and let sit at room temperature for 15 minutes while oven heats.
  11. Bake for 45-50 minutes until top is golden brown and center is set (knife inserted comes out clean).
  12. Let rest for 10 minutes before slicing and serving.

Notes

Use day-old bread to prevent mushiness. Ensure sausage is well-drained to avoid an oily casserole. The overnight rest is crucial for the bread to absorb the custard. Can be frozen for up to 3 months.
