  • 1 cup powdered sugar (120 g), sifted
  • 23 tablespoons milk (3045 ml)
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease your 9×13-inch pan lightly with butter or non-stick spray.
  2. In a large mixing bowl, combine the yellow cake mix, water, vegetable oil, eggs, and lemon zest. Use an electric mixer on medium speed for about 2 minutes until smooth and creamy.
  3. Pour the batter into the prepared pan. Spread evenly with a spatula and bake for 30-35 minutes. Check doneness by inserting a toothpick in the center; it should come out clean or with a few moist crumbs.
  4. While the cake bakes, prepare the blueberry filling: In a small saucepan, combine blueberries, sugar, lemon juice, and cornstarch. Cook over medium heat, stirring frequently, until thickened and bubbling, about 5-7 minutes. Remove from heat and let cool slightly.
  5. Once the cake is out of the oven, let it cool for 10 minutes. Using a toothpick or skewer, poke holes all over the cake about 1 inch apart.
