  • 4 oz (113g) full-fat brick cream cheese
  • 2 tbsp real maple syrup
  • 1 tbsp heavy cream

Instructions

  1. Brown the butter: Melt butter in a heavy skillet over medium heat, stirring constantly until milk solids turn golden brown and smell nutty (about 10 minutes). Remove from heat and let cool slightly but remain liquid.
  2. Mix wet ingredients: In a large bowl, whisk together granulated sugar, brown sugar, eggs, vanilla, and warm brown butter. Whisk in pumpkin puree until smooth.
  3. Combine dry ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, pumpkin pie spice, and salt.
  4. Make the batter: Gradually add dry ingredients to wet ingredients. Mix on low speed or by hand until just combined. Do not overmix.
  5. Prepare the swirl: In a small bowl, beat cream cheese, maple syrup, and heavy cream until smooth and creamy.
  6. Assemble the loaf: Pour half the batter into a prepared 9×5 inch loaf pan. Dollop cream cheese mixture on top. Add remaining batter. Use a knife to gently swirl the cheese into the batter.
