  • 2 cups (240g) all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon (optional)
  • 1 cup (200g) granulated sugar
  • 1/2 cup (100g) packed brown sugar
  • 2 large eggs, room temperature
  • 1 cup (240ml) sour cream (full fat preferred)
  • 1/2 cup (120ml) vegetable oil (or melted coconut oil)
  • 1 teaspoon vanilla extract
  • 2 cups (about 2 medium) grated zucchini, squeezed dry
  • 1 cup (175g) semi-sweet chocolate chips

Instructions

  1. Grate 2 medium zucchinis (about 2 cups). Place the grated zucchini in a clean kitchen towel and squeeze firmly to remove as much liquid as possible. Set aside.
  2. Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan with butter or nonstick spray, or line with parchment paper.
  3. In a large bowl, whisk together flour, baking soda, baking powder, salt, and cinnamon (if using).
  4. In another large bowl, combine granulated sugar and brown sugar. Add eggs one at a time, beating after each until smooth and slightly fluffy (about 2-3 minutes).
  5. Mix in sour cream, vegetable oil, and vanilla extract until fully blended.
  6. Gradually fold the dry ingredients into the wet mixture using a rubber spatula. Fold just until no streaks of flour remain; do not overmix.
  7. Gently fold in the squeezed zucchini and chocolate chips.
  8. Pour batter into prepared loaf pan and spread evenly.
  9. Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean or with a few moist crumbs. Start checking around 50 minutes.
  10. Let bread cool in the pan for 15 minutes, then transfer to a cooling rack to cool completely.

Notes

Squeeze zucchini dry to avoid soggy bread. Tent with foil if top browns too fast. Toss chocolate chips in flour before folding to prevent sinking. Use room temperature ingredients for best results. Can substitute sour cream with Greek yogurt or dairy-free alternatives. For gluten-free, use a 1-to-1 gluten-free baking flour blend.
