  • 2 large eggs, room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 teaspoon vanilla extract
  • 1 ½ cups (about 150g) grated zucchini, unpeeled, lightly squeezed
  • Zest of 2 lemons
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons poppy seeds
  • For the Creamy Lemon Glaze:
  • 1 cup (120g) powdered sugar
  • 23 tablespoons fresh lemon juice
  • 1 tablespoon unsalted butter, softened

Instructions

  1. Preheat the oven to 350°F (175°C). Grease your muffin tin or line with paper liners.
  2. Grate the zucchini using a fine grater and lightly squeeze out excess moisture, leaving it slightly moist.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, and poppy seeds.
  4. In a separate bowl, whisk sugar, eggs, oil, vanilla extract, lemon zest, and lemon juice until smooth.
  5. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Fold in the grated zucchini carefully.
  6. Spoon the batter evenly into the muffin cups, filling each about ¾ full.
  7. Bake for 20-25 minutes until a toothpick inserted comes out clean or with a few moist crumbs.
  8. Cool muffins in the pan for 5 minutes, then transfer to a wire rack to cool completely.
  9. Whisk powdered sugar, lemon juice, and softened butter until smooth and creamy to make the glaze.
  10. Drizzle or spread the lemon glaze over the cooled muffins and let set for about 10 minutes before serving.
