  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp salt
  • 1 tsp ground cinnamon (optional)
  • 1 cup (200g) granulated sugar
  • 2 large eggs, at room temperature
  • ½ cup (120ml) vegetable oil or melted coconut oil
  • 1 tsp vanilla extract
  • Zest of 2 medium lemons (about 2 tbsp)
  • 2 tbsp fresh lemon juice (from about 1 lemon)
  • 1 ½ cups (150g) grated zucchini, squeezed gently to remove excess moisture
  • For the Cream Cheese Glaze:
  • 4 oz (115g) cream cheese, softened
  • ½ cup (60g) powdered sugar, sifted
  • 1 tbsp fresh lemon juice
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour your 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of your grater, then gently squeeze out excess water with a clean kitchen towel or paper towels.
  3. In a medium bowl, whisk together the flour, baking soda, baking powder, salt, and cinnamon.
  4. In a large bowl, beat the sugar and eggs together until light and fluffy (about 2-3 minutes). Add the oil, vanilla extract, lemon zest, and lemon juice, mixing until just combined.
  5. Slowly add the dry mix to the wet ingredients, folding gently with a spatula. Stop as soon as the flour disappears to keep the bread tender.
  6. Fold in the grated zucchini until evenly distributed.
  7. Pour batter into the pan and spread evenly. Tap the pan lightly on the counter to release any trapped air bubbles.
  8. Bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean or with moist crumbs. Start checking at 50 minutes.
  9. Cool in pan for 15 minutes, then transfer to a wire rack to cool completely.
  10. Beat the softened cream cheese with powdered sugar, lemon juice, and vanilla extract until smooth and creamy. Add a teaspoon of milk or lemon juice if too thick.
  11. Drizzle glaze over completely cooled bread. Let it set for 10 minutes before slicing.

Notes

Squeeze excess moisture from zucchini to avoid soggy bread. Use fresh lemon zest and juice for best flavor. Fold batter gently to keep bread tender. Start checking baking time early to prevent overbaking. Prepare glaze while bread cools. If glaze thickens, stir in lemon juice to loosen.
