A simple, moist chocolate chip zucchini bread made in one bowl. This easy recipe uses a squeeze technique to remove excess moisture from the zucchini, ensuring a tender crumb without being soggy.

  • 1/2 cup Brown Sugar, packed
  • 1/2 cup Vegetable Oil
  • 2 large Eggs, room temperature

  • 2 cups Ripe Zucchini, grated and squeezed dry
  • 1 cup Semi-sweet Chocolate Chips
  • 1 teaspoon Cinnamon
  • 1/2 teaspoon Nutmeg
  • 1/4 teaspoon Cloves
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line with parchment paper.
  2. Wash and trim zucchini. Grate 2 cups using a box grater. Place in a clean kitchen towel or cheesecloth and squeeze tightly to remove as much liquid as possible.
  3. In a large mixing bowl, whisk together flour, baking soda, salt, cinnamon, nutmeg, and cloves.
  4. In a separate bowl, whisk together granulated sugar, brown sugar, oil, eggs, and vanilla until smooth.
  5. Pour wet ingredients into dry ingredients. Mix gently with a whisk or spoon until just combined; do not overmix.
  6. Fold in the grated zucchini and chocolate chips.
  7. Pour batter into the prepared loaf pan and smooth the top.
  8. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean or with moist crumbs.
  9. Let bread cool in the pan for 10 minutes, then lift out using parchment paper and place on a cooling rack to cool completely before slicing.

Notes

Ensure zucchini is squeezed dry to prevent a soggy bottom. Do not overmix the batter to avoid a tough texture. For best results, let the bread cool completely before slicing. Can be stored at room temperature for 3 days or frozen for up to 3 months.
