Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×5 inch loaf pan and line the bottom with parchment paper.
  2. In a small bowl, combine 1/2 cup flour, 1/4 cup granulated sugar, 1/4 cup brown sugar, 1/2 cup chopped walnuts, and 1/2 tsp cinnamon. Add 1/4 cup cold, cubed butter and rub with fingers until mixture resembles coarse crumbs. Set aside.
  3. In a medium bowl, whisk together 2 cups flour, 1 tsp baking soda, 1 tsp baking powder, 1 tsp salt, 1 tsp cinnamon, 1/2 tsp nutmeg, and 1/2 ginger.
  4. In a large bowl, beat 1/2 cup softened butter with 3/4 cup granulated sugar and 1/2 cup brown sugar until light and fluffy.
  5. Add 2 eggs one at a time, beating well after each addition. Mix in 1 tsp vanilla extract.
  6. Add 1 cup pumpkin puree and 3 mashed bananas to the butter mixture. Mix on low speed until just combined.
  7. Gradually add dry ingredients to wet ingredients. Mix until flour disappears, being careful not to overmix.
  8. Pour batter into prepared loaf pan. Sprinkle walnut streusel evenly over the top and press gently.
  9. Bake for 55-65 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Notes

Ensure bananas are very ripe for maximum sweetness. Use 100% pure pumpkin puree, not pie filling. Do not overmix the batter to avoid a dense texture. Cold butter is essential for the streusel topping. If the top browns too quickly, tent with foil during the last 15 minutes of baking.
