Ingredients

  • Blue curaçao liqueur (1 cup / 240 ml)
  • Coconut rum (1 cup / 240 ml)
  • Fresh lime juice (1/4 cup / 60 ml)
  • Pineapple juice (1/2 cup / 120 ml)
  • Coconut cream (3/4 cup / 180 ml)
  • Sweetened condensed milk (1/4 cup / 60 ml, optional)
  • Crushed ice (enough to fill the glass halfway)
  • Cranberry juice (3/4 cup / 180 ml)
  • Grenadine syrup (2 tbsp / 30 ml)
  • Fresh raspberries or strawberries (a handful, optional garnish)
  • Fresh lime slices (for garnish)
  • Mint sprigs (for garnish)
  • Optional: soda water or sparkling lemonade to top off for fizz

Instructions

  1. Prepare the Blue Layer (10 minutes): In a shaker or large mixing glass, combine 1 cup blue curaçao, 1 cup coconut rum, 1/4 cup fresh lime juice, and 1/2 cup pineapple juice. Stir gently to combine and chill in the fridge.
  2. Create the White Layer (5 minutes): Whisk together 3/4 cup coconut cream and 1/4 cup sweetened condensed milk until smooth and pourable. Adjust sweetness if desired.
  3. Prepare the Red Layer (5 minutes): Mix 3/4 cup cranberry juice with 2 tablespoons grenadine syrup. Stir gently and set aside fresh raspberries or strawberries for garnish.
  4. Layering the Punch (10 minutes): Fill a clear glass halfway with crushed ice. Slowly pour the red layer over the ice to settle at the bottom. Using a spoon or ladle, gently layer the white coconut mixture over the red layer by pouring over the back of the spoon. Finally, carefully add the blue layer on top using the same spoon technique to keep layers distinct.
  5. Garnish and Serve: Add fresh lime slices and mint sprigs. Optionally top with soda water or sparkling lemonade for fizz. Serve immediately with a straw.

Notes

Pour each layer slowly over the back of a spoon and ensure all liquids are well chilled to prevent mixing. Whisk coconut cream well to avoid lumps. Prepare layers separately and assemble just before serving. Optional edible glitter or frozen berries can be added to the blue layer for sparkle.
