A quick and easy summer dessert featuring caramelized grilled peaches glazed with brown sugar and bourbon, served warm over creamy vanilla ice cream for a perfect hot-and-cold treat.

  • 4 ripe peaches, halved and pitted
  • ½ cup packed light brown sugar
  • 3 tablespoons bourbon
  • 2 tablespoons unsalted butter, melted
  • 1 quart vanilla ice cream
  • ½ teaspoon ground cinnamon (optional)
  • Fresh mint leaves for garnish
  • 1 tablespoon freshly squeezed lemon juice

Instructions

  1. Preheat your grill to medium-high heat (around 375°F / 190°C). Rinse the peaches and slice them in half, removing the pits. Toss the peaches with lemon juice to keep them fresh and prevent browning.
  2. In a medium mixing bowl, combine the brown sugar, bourbon, melted butter, and cinnamon. Stir until the sugar is mostly dissolved and the mixture is glossy.
  3. Using a basting brush, generously coat each peach half with the bourbon glaze.
  4. Place the peaches cut-side down on the grill grates. Grill for about 4-5 minutes without moving them to create caramelized grill marks.
  5. Flip peaches gently using tongs or a spatula, grill for another 3-4 minutes on the skin side, basting lightly with the glaze after flipping.
  6. Check that peaches are tender but still hold their shape and the glaze is bubbly and caramelized.
  7. Scoop vanilla ice cream into serving bowls or glasses. Spoon the warm grilled peaches on top, drizzle any extra glaze over everything, and garnish with fresh mint leaves. Serve immediately.

Notes

If you don’t have a grill, broil peaches in the oven on a foil-lined tray for 6-8 minutes per side, watching closely to avoid burning the sugar. Save some glaze for drizzling when serving. Use firm but ripe peaches for best results. You can substitute bourbon with vanilla extract and peach juice for an alcohol-free version. Coconut milk-based ice cream can be used for a dairy-free option.
