Perfect Brown Sugar Grilled Peach Shortcake with Whipped Mascarpone

A quick and easy summer dessert featuring smoky caramelized grilled peaches atop flaky shortcakes, crowned with a silky whipped mascarpone topping.

  • 4 ripe peaches, halved and pitted
  • 2 tablespoons brown sugar
  • 1 tablespoon unsalted butter, melted
  • 1 teaspoon vanilla extract (optional)
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, cold and cubed
  • 2/3 cup whole milk
  • 1 large egg, beaten
  • 8 ounces mascarpone cheese, cold
  • 1/2 cup heavy cream, cold
  • 1/4 cup powdered sugar
  • 1 teaspoon lemon zest
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your grill to medium-high (about 375°F) or oven to 425°F for baking shortcakes.
  2. Brush each peach half with melted butter, sprinkle with brown sugar and vanilla extract if using. Set aside.
  3. In a large bowl, whisk together flour, granulated sugar, baking powder, and salt. Cut in cold cubed butter until mixture resembles coarse crumbs.
  4. Whisk milk and beaten egg together, then pour into dry ingredients. Stir gently until just combined; dough will be sticky.
  5. Turn dough onto floured surface, pat into 1-inch thick rectangle. Cut rounds about 3 inches wide. Place on parchment-lined baking sheet.
  6. Bake shortcakes for 12–15 minutes until golden brown.
  7. Grill peach halves cut-side down for 3–4 minutes until caramelized, then flip and grill another 2 minutes.
  8. In a chilled bowl, beat mascarpone, heavy cream, powdered sugar, lemon zest, and vanilla extract until soft peaks form.
  9. Slice shortcakes in half horizontally. Spoon whipped mascarpone on bottom half, top with two grilled peach halves, then crown with top half.
  10. Serve immediately while peaches are warm and shortcakes tender.

Notes

Brush shortcakes lightly with melted butter before baking if they seem dry. Soak peaches in peach juice or light syrup before grilling if not juicy enough. Keep butter cold for flaky shortcakes. Whip mascarpone slowly and keep cold to avoid curdling. Can broil peaches if no grill is available.
