Ingredients

Scale
  • 8 oz Aged Cheddar
  • 1 wheel Brie or Camembert (approx. 8 oz)
  • 6 oz Manchego Cheese
  • 8 oz Smoked Sausage or Salami
  • 4 oz Prosciutto
  • 2 lbs Red and Green Grapes
  • 2 large Apples (Honeycrisp or Fuji)
  • 1 lb Figs (fresh or dried)
  • 1 cup Dried Apricots
  • 1 cup Dried Cranberries
  • 2 boxes Mixed Crackers
  • 2 cups Roasted Nuts (walnuts, pecans, almonds)
  • 1 jar Hummus (roasted garlic)
  • 1 cup Marinated Olives
  • 1 cup Dark Chocolate Covered Almonds
  • 1 small jar Local Honey
  • 1 bag Pretzel Rods or Twists
  • Lemon juice (for preventing fruit browning)
  • Fresh herbs (rosemary or thyme for garnish)

Instructions

  1. Wash and thoroughly dry grapes. Slice apples and pears into thin wedges; toss with lemon juice if preparing more than an hour ahead. Place figs in a bowl.
  2. Remove cheeses from the refrigerator at least 30 minutes before serving to bring to room temperature. Slice cheddar into cubes or triangles. Leave brie whole or halve it. Slice Manchego into thin rectangles.
  3. Fold sliced meats loosely to create volume and place them on the board. Do not lay them flat.
  4. Place large platters or boards on the serving table. Position small bowls for dips, olives, and nuts at different points to create visual anchors.
  5. Pour hummus into a bowl and garnish with olive oil and paprika. Fill small bowls with olives and nuts.
  6. Place the brie wheel in a central spot. Surround with cheddar and Manchego. Tuck folded meats into gaps between cheeses to create cohesive clusters.
  7. Scatter grapes and apple slices around the cheeses. Fill empty spaces with dried fruits.
  8. Add pretzel rods by sticking them into small bowls or leaning them against the board to add height.
  9. Drizzle honey over the brie. Add chocolate almonds in a small pile. Sprinkle fresh herbs around the edges for garnish.
  10. Step back and adjust for balance, ensuring there is enough space between items for guests to serve themselves.

Notes

Ensure fruits are completely dry before placing on the board to maintain crispness. Serve cheese at room temperature for best flavor. Leave space between items to avoid overcrowding. Can be assembled 1-2 hours before serving. For gluten-free, use GF crackers. For vegan, use vegan cheese and maple syrup instead of honey.
