Instructions

  1. Mix Dry Ingredients: In a medium bowl, whisk together flour, baking powder, salt, and cinnamon if using. Set aside.
  2. Cream Butter and Sugar: In a large mixing bowl, beat softened unsalted butter with granulated sugar on medium speed for 3-4 minutes until fluffy and pale.
  3. Add Egg and Vanilla: Beat in the egg and vanilla extract until just combined. Do not overmix.
  4. Combine Wet and Dry: Gradually add the flour mixture to the butter mixture, mixing on low speed until dough comes together. Chill for 15 minutes if too sticky.
  5. Chill the Dough: Wrap dough in plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat Oven: Set oven to 350ยฐF (175ยฐC). Line baking sheets with parchment paper or silicone mats.
