  • 2 ยผ tsp active dry yeast (one packet)
  • 1 cup (240 ml) warm water (110ยฐF/43ยฐC)
  • 1 tbsp sugar
  • ยผ cup (60 g) baking soda
  • 1 tbsp coarse sea salt
  • 4 tbsp (60 g) unsalted butter, melted
  • 4 oz (115 g) prosciutto
  • 4 oz (115 g) salami
  • 3 oz (85 g) chorizo slices
  • 4 oz (115 g) aged cheddar cheese
  • 4 oz (115 g) creamy brie cheese
  • 4 oz (115 g) gouda cheese
  • 1 cup (150 g) grapes
  • 1 medium apple, thinly sliced
  • ยฝ cup (75 g) mixed green and Kalamata olives
  • ยฝ cup (75 g) cornichons (pickles)
  • 2 tbsp whole grain mustard
  • Small bowl of honey (optional)
  • ยฝ cup (70 g) roasted almonds and cashews

Instructions

  1. Activate the yeast by whisking together 1 cup warm water (110ยฐF/43ยฐC) and 1 tbsp sugar in a large mixing bowl. Sprinkle 2 ยผ tsp active dry yeast over the top and let sit for 5-10 minutes until foamy.
  2. Gradually stir in 3 cups all-purpose flour with a wooden spoon until a shaggy dough forms. Turn out onto a floured surface and knead for 8-10 minutes until smooth and elastic, adding flour if sticky.
  3. Lightly oil the mixing bowl, place the dough inside, cover with a damp towel or plastic wrap, and let rise in a warm spot for 1 to 1.5 hours until doubled in size.
  4. Preheat oven to 450ยฐF (230ยฐC). Bring a large pot of water to a gentle boil and stir in ยผ cup baking soda.
  5. Punch down the dough to release air. Divide into 12 equal pieces. Roll each piece into a 10-inch long rope. Lay on a baking sheet and carefully pipe or score the football lace pattern across each rope with a sharp knife or small scissors.
  6. Using a slotted spoon, lower 3-4 breadsticks at a time into the boiling baking soda bath. Boil for 30 seconds on each side, then transfer back to the baking sheet.
  7. Brush each breadstick with 4 tbsp melted unsalted butter and sprinkle with coarse sea salt.
  8. Bake in the preheated oven for 12-15 minutes until golden brown.
  9. While breadsticks bake, arrange cured meats, cheeses, fruits, olives, pickles, nuts, and mustard on a wooden board or large platter.
  10. Let pretzel breadsticks cool slightly and serve warm with the assembled charcuterie board.

Notes

Do not skip boiling the pretzel dough to achieve the classic chewy crust. Use coarse sea salt for best flavor and texture. Dough can be made the night before and refrigerated; bring to room temperature before shaping. If no pastry brush is available, use a clean spoon or paper towel to apply butter. For gluten-free, substitute all-purpose flour with almond flour but expect a different texture.
