A quick and easy summer salad featuring smoky-sweet grilled peaches, creamy burrata, salty prosciutto, and a honey drizzle, perfect for fresh and fuss-free meals.

  • 34 ripe but firm peaches, halved and pitted
  • 8 ounces burrata cheese, room temperature
  • 46 thin slices prosciutto, torn into bite-sized pieces
  • 2 tablespoons honey
  • 4 cups arugula or mixed greens, washed and dried
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste
  • Optional: toasted pine nuts or walnuts
  • Optional: fresh basil leaves

Instructions

  1. Wash and dry peaches. Cut each in half and remove pits carefully.
  2. Preheat grill or grill pan to medium-high heat (375-400°F).
  3. Lightly brush peach halves with olive oil. Place cut side down on grill and cook for 3-4 minutes without moving to get char marks.
  4. Flip peaches and grill skin side for 2-3 minutes until tender but not mushy.
  5. In a large bowl, toss arugula or mixed greens with olive oil, lemon juice, salt, and pepper. Set aside.
  6. Arrange dressed greens on serving platter. Tear burrata into chunks and scatter over greens.
  7. Add grilled peach halves, cut side up, on top of greens and burrata.
  8. Tear prosciutto into bite-sized pieces and scatter over salad.
  9. Drizzle honey over the entire salad. Optionally, sprinkle toasted pine nuts or fresh basil leaves.
  10. Serve immediately.

Notes

Let burrata sit at room temperature for 15 minutes before assembling for creamier texture. Watch peaches carefully while grilling to avoid burning. Use firm peaches for best grilling results. Tear prosciutto by hand for better texture. Season salad with salt and freshly ground black pepper just before serving.
