A quick and easy patriotic dessert featuring layers of creamy cheesecake, fresh berries, and cake cubes, perfect for Fourth of July and other red-white-and-blue themed celebrations.

Ingredients

Scale
  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream, cold
  • Fresh raspberries
  • Fresh blueberries
  • Optional: 1 teaspoon granulated sugar for berries
  • 8 oz vanilla pound cake or angel food cake, cut into 1-inch cubes
  • Extra whipped cream (optional, for topping)
  • Fresh mint leaves or extra berries for garnish

Instructions

  1. In a medium bowl, beat 8 oz softened cream cheese with 1 cup powdered sugar and 1 teaspoon vanilla extract using an electric mixer on medium speed until smooth and creamy (about 2-3 minutes).
  2. In a separate chilled bowl, whip 1 cup cold heavy cream on high speed until soft peaks form (about 3-4 minutes).
  3. Gently fold the whipped cream into the cream cheese mixture in batches using a spatula to keep the mixture light and airy.
  4. Rinse raspberries and blueberries gently and pat dry. If berries are tart, sprinkle 1 teaspoon sugar over them and let sit for 10 minutes to macerate.
  5. Slice about 8 oz of vanilla pound or angel food cake into 1-inch cubes.
  6. In a clear trifle bowl, layer one-third of the cake cubes evenly on the bottom (about 1 cup). Spread half of the cheesecake layer over the cake, then add half the raspberries followed by half the blueberries.
  7. Repeat with the remaining cake cubes, cheesecake layer, and berries, finishing with blueberries on top.
  8. Cover with plastic wrap and refrigerate for at least 3 hours, preferably overnight.
  9. Before serving, add a dollop of whipped cream on top and garnish with fresh mint leaves or extra berries.

Notes

Chill mixing bowls before whipping cream for better volume. Fold whipped cream gently into cream cheese to keep mixture light. If cheesecake layer is too thick, add a splash of milk to loosen. Lightly spritz cake cubes with milk or fruit juice if they seem dry. Use fresh, firm berries and thaw frozen berries thoroughly to avoid soggy layers. Assemble close to serving time but allow enough chill time for flavors to meld.
