A quick and easy homemade pumpkin spice syrup that adds a cozy, warm flavor to your coffee, perfect for fall mornings and special coffee rituals.

  • 1 cup (200g) granulated sugar
  • 1 cup (240ml) water
  • 1 large cinnamon stick
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • a pinch of ground cloves
  • 2 tablespoons pure pumpkin puree
  • 1 teaspoon pure vanilla extract

Instructions

  1. Combine sugar and water in a small saucepan. Place over medium heat and stir until the sugar dissolves completely, about 3-5 minutes, until the mixture looks clear and slightly thickened.
  2. Add the cinnamon stick, ground nutmeg, ground ginger, ground cloves, and pumpkin puree. Stir well to blend the pumpkin into the syrup.
  3. Lower the heat to a gentle simmer and let the syrup infuse for 10-12 minutes, stirring occasionally to prevent sticking.
  4. Remove the saucepan from heat and stir in the vanilla extract.
  5. Strain the syrup through a fine mesh strainer or cheesecloth into a clean bowl or storage jar to remove the cinnamon stick and pumpkin bits.
  6. Let the syrup cool to room temperature, then seal and refrigerate. It will keep well for up to two weeks.

Notes

Do not rush the simmer to avoid bitterness. Use fresh spices for best flavor. If syrup crystallizes after refrigeration, warm gently before use. Adjust sweetness or spice level to taste. For vegan or refined sugar-free versions, substitute sugar with maple syrup or coconut sugar and use vegan vanilla extract.
