  • 1 lb ground beef (80/20 blend)
  • 2 medium bell peppers (mixed colors), chopped
  • 1 medium yellow onion, diced
  • 1/2 cup heavy cream or half-and-half
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese
  • 1 tsp cumin
  • 1 tsp paprika
  • 1 tbsp olive oil or butter
  • Salt and black pepper to taste

Instructions

  1. Wash and dice the bell peppers and onion. Mince the garlic. Have everything ready before cooking.
  2. Heat a large skillet over medium-high heat. Add the ground beef and break it apart into small crumbles. Cook until no pink remains (5-7 minutes).
  3. Drain excess fat, leaving about a tablespoon in the pan for flavor.
  4. Add the diced onions and bell peppers to the beef. Cook for 3-4 minutes until onions are soft. Add garlic, cumin, paprika, salt, and pepper in the last minute.
  5. Reduce heat to medium-low. Pour in the heavy cream and stir gently. Simmer for 2 minutes until the sauce thickens slightly.
  6. Sprinkle the shredded cheese over the top. Stir continuously until the cheese is fully melted and the sauce is smooth.
  7. Taste and adjust salt if needed. Serve immediately while hot.

Notes

Do not overcrowd the pan to ensure the beef browns rather than steams. Use fresh garlic for best flavor. Avoid pre-shredded cheese as anti-caking agents can make the sauce grainy. Add cream off high heat to prevent splitting. For a lighter option, substitute ground turkey and Greek yogurt (added off heat).
