  • 45 medium Kirby or Persian cucumbers, firm and crisp

  • 1 cup (240 ml) white distilled vinegar
  • 2 tablespoons pickling salt
  • 34 fresh dill sprigs or 2 teaspoons dried dill
  • 3 garlic cloves, smashed
  • 1 teaspoon whole black peppercorns
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon mustard seeds

Instructions

  1. Rinse 4-5 firm Kirby cucumbers under cold water. Trim off the blossom ends and slice into spears or rounds about ¼ to ½ inch thick.
  2. In a mixing bowl, combine 2 cups water, 1 cup white distilled vinegar, and 2 tablespoons pickling salt. Stir until salt is fully dissolved.
  3. Place 3-4 fresh dill sprigs, 3 smashed garlic cloves, 1 teaspoon black peppercorns, 1 teaspoon mustard seeds, and optional ½ teaspoon red pepper flakes into a clean quart-sized jar. Tightly pack the cucumber slices, leaving about an inch of space at the top.
  4. Pour the brine over the cucumbers, ensuring they are fully submerged. Press down gently to release trapped air bubbles. Seal the jar tightly with the lid.
  5. Place the jar in the refrigerator. Pickles start tasting great after 24 hours and get better after 48 hours. They keep crisp and delicious for up to 4 weeks.
  6. After at least a day, open the jar and enjoy the pickles. For stronger flavor, leave them another day or two. Serve chilled directly from the jar.

Notes

Use fresh, firm cucumbers and remove blossom ends to maintain crispness. Keep cucumbers fully submerged in brine to avoid soft spots. Pickling salt is recommended to prevent cloudy brine. Adding grape leaves can help keep pickles crisp. No need to boil or sterilize jars when refrigerating. Flavor improves after 48 hours.
