  • 1 pound (450g) fresh banana peppers, thinly sliced
  • 1 cup (240ml) white vinegar
  • 1 cup (240ml) water
  • 2 tablespoons sugar
  • 1 tablespoon kosher salt
  • 2 garlic cloves, peeled and smashed
  • 1 teaspoon whole black peppercorns
  • 1 teaspoon mustard seeds
  • ½ teaspoon red pepper flakes (optional)
  • A couple of fresh dill sprigs

Instructions

  1. Wash 1 pound (450g) of banana peppers thoroughly. Slice into thin rings about 1/8 inch (3mm) thick. Removing seeds is optional.
  2. In a saucepan, combine 1 cup white vinegar, 1 cup water, 2 tablespoons sugar, and 1 tablespoon kosher salt. Stir over medium heat until sugar and salt dissolve, about 3 to 5 minutes. Avoid boiling hard.
  3. Remove brine from heat and stir in 2 smashed garlic cloves, 1 teaspoon black peppercorns, 1 teaspoon mustard seeds, and ½ teaspoon red pepper flakes if using. Let cool for 5 minutes.
  4. Place a couple of fresh dill sprigs into a clean quart-sized glass jar. Tightly pack the sliced banana peppers inside, leaving about ½ inch space at the top.
  5. Pour the warm brine over the peppers until fully submerged. Tap the jar gently to release air bubbles.
  6. Seal the jar and refrigerate. Peppers will be ready in 24 hours; flavor deepens after 2-3 days.

Notes

Use fresh, firm banana peppers for best results. Slice thinly to absorb brine faster and keep crispness. Cool brine slightly before pouring to avoid cooking peppers. Keep peppers submerged in brine to prevent mold. Refrigerate immediately. Avoid metal lids that react with vinegar; use plastic-lined lids instead.
