A simple, flavorful weeknight dinner featuring roasted chicken strips and charred bell peppers on a single baking sheet, ready in under 20 minutes.

Ingredients

Scale
  • 1.5 lbs boneless, skinless chicken breasts
  • 2 large bell peppers (mixed colors), sliced into strips
  • 1 large yellow onion or 2 small sweet onions, sliced into strips
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly cracked black pepper
  • 1 large lime (juice and zest)
  • Flour or corn tortillas, warmed

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Cut chicken breasts into 1-inch thick strips. In a medium bowl, toss chicken with 1 tbsp olive oil, 1 tsp chili powder, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1/2 tsp salt, and 1/4 tsp black pepper. Let marinate for 5 minutes.
  3. Slice bell peppers and onions into strips. In a separate bowl, toss vegetables with remaining 1 tbsp olive oil, 1/2 tsp cumin, 1/2 tsp smoked paprika, 1/2 tsp garlic powder, 1 tsp onion powder, 1/2 tsp salt, and 1/4 tsp black pepper.
  4. Line a large half-sheet baking pan with parchment paper or grease lightly. Spread vegetables in a single layer without overlapping. Place chicken strips in the center or around the veggies, ensuring space between pieces.
  5. Roast in preheated oven for 12-15 minutes. Halfway through (around 6 minutes), stir vegetables and flip chicken pieces.
  6. Chicken is done when internal temperature reaches 165°F (74°C) and edges are charred. Peppers should be tender-crisp.
  7. Remove from oven, squeeze lime juice over everything, and sprinkle with fresh cilantro if desired. Let rest for 2 minutes before serving with warm tortillas.

Notes

Do not overcrowd the pan to ensure vegetables roast rather than steam. Cut chicken into uniform strips for even cooking. If edges burn, lower oven temperature to 400°F. Tortillas should be stored separately from filling to maintain texture.
