Refreshing Cucumber Mint Jalapeño Lemonade

A quick and easy summer drink combining crisp cucumber, fresh mint, tangy lemon, and a spicy kick of jalapeño for a refreshing and unique lemonade.

Ingredients

  • 1 medium cucumber, peeled and sliced
  • About 15 fresh mint leaves, loosely packed
  • 1 small jalapeño, sliced (seeds removed for milder heat)
  • 4 large lemons, juiced (about ½ cup fresh lemon juice)
  • ½ cup (100 g) granulated sugar or ⅓ cup honey, adjust to taste
  • 4 cups (1 liter) cold water
  • Ice cubes as needed
  • Optional: pinch of sea salt
  • Optional: club soda or sparkling water to add fizz

Instructions

  1. Peel and chop the cucumber into chunks. Blend in a blender or food processor until smooth, about 30 seconds.
  2. Strain the cucumber puree through a fine mesh strainer or cheesecloth into a bowl or pitcher, pressing to extract as much juice as possible.
  3. Lightly muddle the mint leaves and sliced jalapeño in a small bowl using a muddler or wooden spoon. Remove seeds for less heat if desired.
  4. Juice the lemons using a citrus juicer, straining out seeds to get about ½ cup fresh lemon juice.
  5. In a large pitcher, combine the strained cucumber juice, muddled mint and jalapeño, and lemon juice. Stir in sugar or honey until dissolved. Adjust sweetness to taste.
  6. Add cold water and stir well. Refrigerate for at least 30 minutes to chill and let flavors meld.
  7. Serve over ice cubes, garnished with a sprig of mint or a thin lemon wheel. For a sparkling version, replace half the water with club soda just before serving.

Notes

Remove jalapeño seeds to reduce heat. Chill lemonade for at least 30 minutes to mellow flavors and soften jalapeño heat. For sparkling lemonade, swap half the water with club soda before serving. Adjust sweetness gradually to taste.
