Instructions

  1. Brew the Butterfly Pea Flower Tea: Pour 4 cups (32 fl oz) of boiling water over 2 tablespoons of dried butterfly pea flowers or 2 tea bags in a heatproof container. Let steep for 10 minutes until the water turns a deep blue-purple color. Strain out the flowers using a fine mesh strainer and set the tea aside to cool to room temperature, about 20 minutes.
  2. Make the Lavender Syrup: In a saucepan, combine 1 cup granulated sugar, 1 cup water, and 2 tablespoons dried culinary lavender buds. Bring to a gentle boil over medium heat, stirring until the sugar dissolves. Once boiling, reduce heat and simmer for 5 minutes to infuse the lavender flavor. Remove from heat and let steep for another 15 minutes. Strain out the lavender buds and cool the syrup completely.
  3. Juice the Lemons: While the syrup and tea cool, juice about 4-5 medium lemons to get 1 cup of fresh lemon juice. Strain the juice to remove seeds and pulp for a smoother lemonade.
  4. Mix the Lemonade: In a large pitcher, combine the cooled butterfly pea flower tea, lavender syrup, and fresh lemon juice. Stir gently to mix. The color will slowly shift from blue-purple to pink as the lemon juice acid reacts with the tea.
