A light, bright, and refreshing mocktail combining fresh peaches, basil, lemon juice, simple syrup, and sparkling water for a sophisticated non-alcoholic drink.

  • 1 large ripe peach, sliced
  • 6 to 8 fresh basil leaves, gently torn or muddled
  • 1 tablespoon fresh lemon juice (about half a lemon)
  • 1 to 2 teaspoons simple syrup
  • 1 cup (8 fl oz) chilled sparkling water
  • Ice cubes, enough to fill your glass
  • Optional: 1 teaspoon non-alcoholic bourbon or vanilla extract

Instructions

  1. Slice one large ripe peach into thin wedges.
  2. Tear the basil leaves gently to release their aroma but avoid shredding them too finely.
  3. In a mixing glass, add peach slices, basil leaves, and 1 tablespoon freshly squeezed lemon juice.
  4. Gently muddle with a muddler or the back of a spoon to crush the peaches and bruise the basil just enough to release their oils and juices. Avoid over-muddling.
  5. Stir in 1 to 2 teaspoons of simple syrup depending on sweetness preference.
  6. If using, add a splash (about 1 teaspoon) of non-alcoholic bourbon or vanilla extract.
  7. Fill a rocks or highball glass with ice cubes.
  8. Strain the muddled mixture over the ice, leaving behind large pieces if preferred.
  9. Pour 1 cup (8 fl oz) of chilled sparkling water gently over the muddled mixture and stir lightly to combine.
  10. Garnish with a fresh basil leaf or a thin peach slice on the rim and serve immediately.

Notes

Do not over-muddle the basil to avoid bitterness. Use ripe peaches for best flavor. Adjust simple syrup to taste. Keep sparkling water chilled and add last to preserve fizz. Can substitute basil with mint or thyme. Frozen peaches can be used if thawed and drained.
