Ingredients

Scale
  • 1 cup (227g) unsalted butter, browned and cooled slightly
  • 1 cup (200g) light brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons vanilla extract
  • 1 1/2 cups (190g) all-purpose flour, sifted
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 2 medium apples (about 1 1/2 cups peeled and diced; Granny Smith or Honeycrisp recommended)
  • 1 teaspoon ground cinnamon
  • 1/2 cup caramel sauce (homemade or store-bought)
  • Sea salt flakes, for sprinkling on top (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease your 8×8-inch pan with butter or non-stick spray. Line with parchment paper, leaving an overhang for easy removal later.
  2. In a medium saucepan over medium heat, melt 1 cup of unsalted butter. Stir frequently as it foams and turns golden brown, releasing a nutty aroma. Remove from heat as soon as you see small brown flecks and smell that toasty scent. Pour into a bowl and let cool slightly.
  3. In a large bowl, whisk together 1 cup light brown sugar and 1/4 cup granulated sugar. Add 2 room-temperature eggs one at a time, whisking until smooth and slightly fluffy. Stir in 2 teaspoons pure vanilla extract.
  4. Slowly pour the cooled browned butter into the sugar-egg mixture while whisking continuously to avoid cooking the eggs. In a separate bowl, sift together 1 1/2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon salt, and 1 teaspoon ground cinnamon. Gradually fold the dry ingredients into the wet until just combined—do not overmix.
  5. Peel, core, and dice 2 medium apples into small chunks (about 1/2-inch pieces). Fold the apples gently into the batter, ensuring even distribution.
  6. Pour the batter into the prepared pan and spread evenly with a spatula. Bake for 30-35 minutes or until the top is golden and a toothpick inserted near the center comes out with moist crumbs (not wet batter).
  7. Let the bars cool in the pan on a wire rack for at least 20 minutes to set the texture and prevent the caramel from melting too much when drizzled.
  8. Warm 1/2 cup caramel sauce slightly if needed to make it pourable. Drizzle over the cooled bars using a spoon or piping bag. Sprinkle with flaky sea salt for a nice contrast.
  9. Use the parchment overhang to lift the bars out, then cut into squares or rectangles. Serve slightly warm or at room temperature.

Notes

Watch the butter closely when browning to avoid burning. Fold dry ingredients gently to keep bars tender. Toss apples lightly in flour if they release too much juice. Warm caramel gently and add a teaspoon of cream or milk if it thickens too much. Start checking bars at 28 minutes to avoid overbaking.
