  • 2 ยฝ cups all-purpose flour (about 315 g)
  • 1 cup unsalted butter (225 g), cold and cubed
  • 1 cup sharp cheddar cheese, freshly grated (100 g)
  • 2 tbsp granulated sugar
  • ยฝ tsp salt
  • 4 to 6 tbsp ice water
  • 3 medium apples (about 500 g), peeled, cored, and thinly sliced
  • ยฝ cup sharp cheddar cheese, grated (50 g)
  • ยผ cup packed brown sugar (50 g)
  • 1 tsp cinnamon
  • ยผ tsp nutmeg
  • 1 tbsp lemon juice
  • 1 tbsp all-purpose flour
  • Optional: 2 tbsp coarse sugar for sprinkling on top

Instructions

  1. In a large bowl, combine 2 ยฝ cups all-purpose flour, 2 tbsp granulated sugar, and ยฝ tsp salt.
  2. Add the cold, cubed butter and cut it into the flour using a pastry cutter or fingers until mixture resembles coarse crumbs with pea-sized butter pieces.
  3. Stir in 1 cup freshly grated sharp cheddar cheese.
  4. Slowly add 4 to 6 tbsp ice water, one tablespoon at a time, mixing gently until dough just holds together when pressed. Do not overwork.
  5. Shape dough into two discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  6. Peel, core, and thinly slice apples. Toss with ยผ cup packed brown sugar, 1 tsp cinnamon, ยผ tsp nutmeg, 1 tbsp lemon juice, 1 tbsp flour, and ยฝ cup grated sharp cheddar cheese until evenly coated.
  7. Preheat oven to 375ยฐF (190ยฐC) and line a 9×13-inch baking pan with parchment paper.
  8. Roll out one dough disc on a lightly floured surface into a rectangle slightly larger than the pan. Transfer to pan and press gently to fit, leaving a small overhang.
  9. Spread apple-cheddar filling evenly over the crust.
  10. Roll out second dough disc to same size and place over filling. Pinch edges to seal and cut small slits on top to vent steam.
  11. Optional: Sprinkle 2 tbsp coarse sugar over top crust.
  12. Bake for 35 to 40 minutes until crust is golden brown and filling bubbles. Cover with foil halfway if crust browns too quickly.
  13. Cool completely in pan on wire rack before slicing into squares.

Notes

Keep butter cold for flaky crust. Grate cheese fresh for best melting. Chill dough to prevent shrinking. Slice apples thinly and evenly. If apples are very juicy, toss with extra flour to avoid soggy filling. Let bars cool completely before slicing. Use foil to prevent over-browning.
