  • 1 ½ cups (360 ml) whole milk or 2%
  • 4 ounces (115 g) cream cheese, softened
  • 1 small shallot, finely diced
  • 2 tablespoons fresh dill, chopped
  • 2 tablespoons everything bagel seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil or butter, for greasing the baking dish
  • Optional: capers or thinly sliced red onion for garnish or extra zing

Instructions

  1. Preheat oven to 350°F (175°C). Cut everything bagels into 1-inch cubes. Spread on a baking sheet and toast for 8-10 minutes until starting to crisp but not browned.
  2. In a large bowl, whisk together eggs, milk, and softened cream cheese until smooth.
  3. Stir in diced shallot, chopped dill, 1 tablespoon everything bagel seasoning, salt, and pepper to taste.
  4. Gently fold toasted bagel cubes and chopped smoked salmon into the custard mixture, ensuring bagels are evenly coated but not broken.
  5. Grease a 9×13-inch baking dish with olive oil or butter. Spread the casserole mixture evenly in the dish. Sprinkle remaining tablespoon of everything bagel seasoning on top.
  6. Bake for 35-40 minutes until the top is golden brown and custard is set but moist. A knife inserted in the center should come out clean.
  7. Let the casserole rest for 10 minutes before slicing. Garnish with extra dill, capers, or thinly sliced red onions if desired.
