  • 2 cans (15 oz each) black beans, rinsed and drained
  • 2 cups sharp cheddar cheese, shredded
  • 4 oz cream cheese, softened
  • 1/2 cup onion, finely diced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • Gel-based black food coloring
  • 1/2 cup white cheddar or mozzarella cheese, shredded
  • Green olives, sliced
  • Rolled oats or sesame seeds (optional, for spider bodies)
  • Olive oil (for sautéing)
  • Milk or water (for thinning if needed)

Instructions

  1. Rinse and drain the black beans thoroughly. Puree them in a food processor until smooth and paste-like.
  2. In a medium saucepan over medium heat, sauté the diced onion in olive oil until translucent (3-4 minutes). Add minced garlic and cook for 30 seconds until fragrant.
  3. Add the pureed black beans to the saucepan. Stir in cumin and chili powder. Cook for 2-3 minutes, stirring frequently, to meld flavors.
  4. Reduce heat to low. Add softened cream cheese and shredded sharp cheddar. Stir constantly until the cheese is melted and the mixture is smooth and creamy.
  5. Remove from heat. Add gel black food coloring a few drops at a time, stirring well, until the desired deep black color is achieved.
  6. Separately melt the white cheddar or mozzarella until liquid but not browned. Transfer to a squeeze bottle or a zip-top bag with a corner snipped off.
  7. Spoon the black queso into small bowls or ramekins. Drizzle the melted white cheese in concentric circles or zig-zags to create a web pattern. Use a toothpick to drag lines from the center outward.
  8. Place a small ball of oats or sesame seeds in the center for the spider body and add olive slices for legs. Serve warm.

Notes

Rinse beans thoroughly to remove starchy liquid which can make the dip gluey. Use gel food coloring rather than liquid to maintain thickness. If the dip thickens too much upon cooling, microwave for 10 seconds and stir. This dip does not freeze well due to cheese separation; store leftovers in the refrigerator for up to 3 days.
