Instructions

  1. Boil eggs: Place eggs in a single layer in a pot, cover with cold water, and bring to a boil. Remove from heat, cover, and let sit for 12 minutes. Transfer to an ice bath and cool for at least 10 minutes.
  2. Peel and prepare: Tap eggs to crack shells, peel under running water, and pat dry. Slice off the top 1/4 inch of each egg white to create a flat base. Scoop out yolks into a mixing bowl.
  3. Make filling: Mash yolks with mayo, Dijon mustard, vinegar, Worcestershire sauce, garlic powder, and black pepper until smooth and creamy. Adjust seasoning if needed.
  4. Pipe eyeballs: Transfer mixture to a piping bag. Pipe filling into egg whites, creating a slight dome. Pipe a smaller, raised mound in the center for the pupil. Add chopped olives or capers if desired.
  5. Add details: Lightly dust tops with paprika using a sieve. Use a toothpick to drag paprika in thin lines for a bloodshot effect. Sprinkle with extra black pepper.

Notes

Use eggs that are about a week old for easier peeling. Ensure ingredients are at room temperature for a smoother filling. Do not freeze leftovers as texture becomes rubbery.
