  • 3 large eggs, room temperature
  • 1/2 cup vegetable oil
  • 1 cup hot water or strong brewed coffee
  • 1 1/2 cups dark chocolate chips (60% cocoa)
  • 1/2 cup heavy cream
  • 2 tablespoons butter
  • 1215 Oreo cookies
  • White icing or royal icing (for spider details)

Instructions

  1. Preheat oven to 350ยฐF (175ยฐC). Grease and line two 8-inch or 9-inch round cake pans with parchment paper.
  2. In a large bowl, combine cake mix, eggs, oil, and hot water (or coffee). Beat on medium speed for 2 minutes until smooth.
  3. Pour batter evenly into prepared pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
  4. Let cakes cool in pans for 10 minutes, then turn out onto a cooling rack to cool completely.
  5. While cakes cool, heat heavy cream in a small saucepan over medium heat until it just begins to simmer.
  6. Place chocolate chips in a heatproof bowl, pour hot cream over them, and let sit for 5 minutes.
  7. Add butter to the chocolate mixture and stir slowly until smooth and glossy. Let cool to toothpaste consistency.
  8. Place one cake layer on a serving plate and spread a thin layer of ganache as a crumb coat. Top with second layer.
  9. Cover the top and sides with remaining ganache. Chill in refrigerator for 20-30 minutes to set.
  10. Pipe concentric circles of ganache on the chilled cake, starting from the center.
  11. Use a toothpick to drag lines from the center outward through the circles to create a spiderweb pattern.
  12. Use white icing to draw eight legs and two eyes on Oreo cookies to create spiders.
  13. Place Oreo spiders on the web and serve chilled or at room temperature.

Notes

Ensure the cake is completely cool before applying ganache to prevent melting. The ganache consistency is critical; it should be thick enough to hold shape but fluid enough to drip. For a vegan version, use vegan cake mix, dairy-free chocolate, and coconut cream. For gluten-free, use GF cake mix and certified GF Oreos.
