  • 1 cup (240 ml) white vinegar (distilled preferred, apple cider vinegar optional)
  • 1 cup (240 ml) water
  • 1 tablespoon kosher salt or pickling salt
  • 1 teaspoon black peppercorns
  • ¼ teaspoon red pepper flakes (optional)

Instructions

  1. Wash cucumbers thoroughly and cut off the blossom ends.
  2. Slice each cucumber lengthwise into spears about ¼ to ½ inch (6-12 mm) thick.
  3. In a small saucepan, combine white vinegar, water, kosher salt, mustard seeds, black peppercorns, and red pepper flakes (if using). Heat over medium until salt dissolves, about 3-5 minutes. Remove from heat and let cool slightly.
  4. Place fresh dill sprigs and crushed garlic cloves into the bottom of a quart-sized glass jar.
  5. Pack cucumber spears vertically into the jar, leaving about ½ inch (1.25 cm) space at the top.
  6. Pour the warm brine over the cucumbers, covering them completely. Press gently to remove air bubbles.
  7. Leave the jar open until the brine cools to room temperature, then seal with the lid.
  8. Refrigerate for at least 48 hours before eating. Pickles will become tangier and more flavorful up to 2 weeks.
  9. Taste and adjust seasoning if needed before serving.
