  • 1 box (15.25 oz) yellow cake mix
  • 1 can (15 oz) 100% pure pumpkin puree
  • 1/2 cup pure maple syrup
  • 2 large eggs, at room temperature
  • 1/3 cup vegetable oil
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Position the rack in the center of the oven. Grease a 9×5-inch loaf pan with non-stick spray or line it with parchment paper, leaving some overhang on the sides for easy lifting.
  2. In a large mixing bowl, combine the pumpkin puree, maple syrup, eggs, and vegetable oil. Whisk until the mixture is smooth and well combined. It should look like a thick, glossy orange batter. Do not overmix; just stir until there are no streaks of egg or oil. A few small lumps are fine.
  3. Add the entire box of yellow cake mix to the wet ingredients. Stir gently with a wooden spoon or spatula until just combined. Do not overmix, or the loaf will be tough. It is okay if there are a few small streaks of dry mix left.
  4. Fold in the chocolate chips. Reserve about 2 tablespoons to sprinkle on top if you want a pretty presentation. Gently fold them in with a spatula, just until they are evenly distributed.
  5. Pour the batter into the prepared loaf pan. Spread it evenly with the spatula. Sprinkle the reserved chocolate chips on top, pressing them in gently so they stick.
  6. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs. The top should be golden brown and slightly cracked. If the top is browning too quickly after 40 minutes, tent the loaf loosely with aluminum foil.
  7. Let the loaf cool in the pan for 10 minutes. Then, using the parchment paper overhang, lift it out of the pan and transfer it to a wire rack to cool completely. Do not skip this step.

Notes

For a deeper maple flavor, brush the top of the warm loaf with a little extra maple syrup right after it comes out of the oven. Do not overmix the batter. Use room temperature ingredients. Let the loaf cool completely before slicing. If your loaf sinks in the middle, it still tastes great.
