Wholesome Turkey and White Bean Fall Skillet Dinner in 30 Minutes

  • 1 tablespoon olive oil
  • 1 pound ground turkey (93% lean)
  • 1 medium yellow onion, diced (about 1 cup)
  • 1 poblano pepper, seeded and diced
  • 3 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ยฝ teaspoon black pepper
  • 1 teaspoon smoked paprika
  • ยฝ teaspoon ground cumin
  • ยฝ teaspoon dried oregano
  • ยผ teaspoon cayenne pepper (optional)
  • 1 tablespoon fresh sage, chopped (or 1 teaspoon dried)
  • 1 can (15 ounces) cannellini beans, drained and rinsed
  • 1 cup low-sodium chicken broth
  • 1 tablespoon tomato paste
  • Juice of ยฝ lemon
  • Fresh parsley, chopped (about 2 tablespoons)
  • Optional: grated Parmesan for garnish

Instructions

  1. Prep your ingredients first: dice the onion, seed and dice the poblano, mince the garlic, chop the fresh sage, and drain and rinse the beans.
  2. Heat the olive oil in a large skillet over medium-high heat until shimmering. Add the ground turkey and break it up with a wooden spoon. Cook undisturbed for 3 minutes to get a brown crust, then continue cooking for 3-4 minutes, breaking into crumbles. Transfer the cooked turkey to a plate using a slotted spoon, leaving about 1 tablespoon of drippings in the pan.
  3. Reduce heat to medium. Add the diced onion and poblano to the skillet. Cook for 4-5 minutes, stirring occasionally, until the onion is translucent and the poblano has softened.
  4. Stir in the minced garlic, smoked paprika, cumin, oregano, cayenne (if using), and fresh sage. Cook for about 1 minute until fragrant.
  5. Add the tomato paste and stir into the vegetables. Cook for 1 minute, stirring constantly. Pour in the chicken broth and scrape up any browned bits from the bottom of the pan.
  6. Stir in the drained cannellini beans and return the cooked turkey to the skillet. Bring to a gentle simmer, then reduce heat to medium-low. Cook for 5-7 minutes, stirring occasionally, until the sauce has thickened slightly and the beans are heated through.
  7. Remove the skillet from the heat. Squeeze the juice of half a lemon over the top and stir gently. Taste and adjust seasoning with more salt or pepper if needed.
  8. Sprinkle fresh chopped parsley over the top and add grated Parmesan if desired. Let rest for 2-3 minutes before serving. Serve hot straight from the skillet or spooned into bowls.

Notes

Don’t skip the resting time after cookingโ€”letting it sit for 2-3 minutes allows the flavors to settle and the sauce to thicken. For best results, use 93% lean ground turkey to avoid dryness. The dish tastes even better the next day as leftovers.
