  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • 2 large eggs, room temperature
  • ⅓ cup plain Greek yogurt (or dairy-free coconut yogurt for vegan option)
  • ⅓ cup honey (plus extra for drizzle)
  • ¼ cup melted coconut oil or unsalted butter, cooled
  • 1 tsp vanilla extract
  • Optional add-ins:
  • ½ cup chopped walnuts or pecans
  • ½ cup dark chocolate chips
  • ¼ cup shredded coconut

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using medium holes of a box grater. Place grated zucchini in a clean kitchen towel and gently squeeze out excess moisture. Set aside.
  3. In a large bowl, combine rolled oats, whole wheat flour, baking soda, baking powder, cinnamon, and salt. Stir to evenly distribute.
  4. In a separate bowl, mash ripe bananas until smooth. Add eggs, Greek yogurt, honey, melted coconut oil, and vanilla extract. Whisk until fully combined.
  5. Pour wet ingredients into dry ingredients bowl. Stir gently with a spatula or wooden spoon just until combined; do not overmix.
  6. Fold in grated zucchini and any optional add-ins like nuts or chocolate chips. If batter seems too dry, add a splash of milk (dairy or plant-based).
  7. Pour batter into prepared loaf pan and smooth the top with a spatula.
  8. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.
  9. Cool the loaf in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  10. Before serving, drizzle a little extra honey on top for a glossy finish and added sweetness.
