These Best Philly Cheesesteak Sliders are ready in under 30 minutes and packed with flavor. Perfect for game day, they feature thinly sliced ribeye, caramelized onions and peppers, and a creamy cheese sauce on soft slider buns.

  • 1 ½ pounds ribeye steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1 large yellow onion, thinly sliced (about 2 cups)
  • 1 large green bell pepper, thinly sliced (about 1 ½ cups)
  • 2 tablespoons unsalted butter
  • Pinch of salt
  • 8 ounces provolone cheese, shredded
  • 4 ounces cream cheese, softened to room temperature
  • ¼ cup whole milk (or heavy cream)
  • 1 tablespoon unsalted butter
  • 12 slider buns (Hawaiian sweet rolls or brioche)
  • 2 tablespoons melted butter
  • 1 teaspoon sesame seeds (optional)
  • ½ teaspoon garlic salt

Instructions

  1. If your butcher hasn’t sliced the ribeye, pop the steak in the freezer for about 30 minutes to firm it up, then slice it paper-thin. Season with salt, pepper, and garlic powder. Set aside.
  2. Heat a large skillet over medium heat and add 2 tablespoons of butter. Add sliced onions and peppers with a pinch of salt. Cook for 8 to 10 minutes, stirring occasionally, until soft and golden. Transfer to a bowl and cover to keep warm.
  3. In the same skillet, turn heat to high and add olive oil. Spread the sliced ribeye in a single layer and cook undisturbed for 1 minute. Stir and cook for another 1 to 2 minutes until browned but still juicy. Remove from pan and set aside with vegetables.
  4. In a small saucepan over low heat, melt 1 tablespoon of butter. Add cream cheese and stir until soft. Slowly pour in milk while stirring constantly. Add shredded provolone a handful at a time, stirring until fully melted. Keep heat low to prevent separation. Remove from heat once smooth.
  5. Preheat oven to 350°F. Slice slider buns in half horizontally, keeping them connected. Place bottom half in a 9×13 baking dish. Spread cooked meat evenly over buns, top with caramelized onions and peppers, and pour cheese sauce over everything. Place top half of buns on top.
  6. Mix melted butter with garlic salt and brush generously over bun tops. Sprinkle with sesame seeds if using. Cover with aluminum foil and bake for 10 minutes. Remove foil and bake for another 5 to 7 minutes until tops are golden and cheese is bubbly. Let rest for 2 minutes before cutting and serving.

Notes

Toast the buns lightly before assembling to prevent sogginess. Let sliders rest for 2 minutes before cutting to help the cheese set. For best results, shred provolone from a block rather than using pre-shredded cheese.
