  • 2 tablespoons (15 g) all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup (90 g) old-fashioned rolled oats
  • ¾ cup (90 g) all-purpose flour
  • ½ cup (100 g) packed light brown sugar
  • ¼ cup (50 g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • ½ cup (113 g) cold unsalted butter, cut into small cubes

Instructions

  1. Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish with butter or non-stick spray.
  2. In a large bowl, toss the sliced apples with ¼ cup granulated sugar, ¼ cup brown sugar, 2 tablespoons flour, 1 teaspoon cinnamon, lemon juice, and vanilla extract. Let sit for 5-10 minutes.
  3. In another large bowl, whisk together oats, ¾ cup flour, ½ cup brown sugar, ¼ cup granulated sugar, ½ teaspoon cinnamon, and salt. Add cold butter cubes and cut in with a pastry cutter or two forks until mixture resembles coarse, clumpy sand with some pea-sized butter pieces.
  4. Spread apple mixture evenly in the prepared dish. Sprinkle crumble topping evenly over apples without pressing down.
  5. Place dish on a baking sheet. Bake for 45-50 minutes, until topping is deep golden brown and filling is bubbling around edges. If topping browns too quickly after 35 minutes, tent loosely with foil.
  6. Cool on a wire rack for at least 15-20 minutes before serving. Serve warm with vanilla ice cream or whipped cream.

Cold butter is essential for a flaky topping. Use a mix of tart and sweet apples for best texture. Let the crisp rest before serving to allow the filling to set. Can be assembled up to 4 hours ahead and refrigerated before baking.
