A simple, creamy pumpkin pie made with just five core ingredients. This recipe focuses on quality over complexity, resulting in a smooth, custard-like dessert perfect for quiet mornings or holiday gatherings.

Ingredients

Scale
  • 1 can (15 oz) pure pumpkin puree
  • 1 cup heavy cream
  • 3 large eggs, room temperature
  • 3/4 cup granulated sugar
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 store-bought or homemade 9-inch pie crust

Instructions

  1. Preheat oven to 425°F (220°C). Fit the pie crust into a 9-inch pie dish, trim edges, and prick the bottom with a fork. Place the empty crust in the oven for the first 10 minutes to pre-bake.
  2. In a large mixing bowl, whisk together the granulated sugar, pumpkin pie spice, and salt to distribute spices evenly.
  3. Add the pumpkin puree and vanilla extract to the dry ingredients. Whisk until the mixture is smooth and lump-free.
  4. In a separate bowl, whisk the eggs until uniform. Slowly pour in the heavy cream while whisking. Gradually stream this egg-cream mixture into the pumpkin mixture, whisking gently to avoid incorporating too much air.
  5. Remove the pre-baked crust from the oven and reduce oven temperature to 350°F (175°C). Pour the filling into the hot crust, filling to just below the rim.
  6. Bake at 350°F (175°C) for 50-60 minutes. The pie is done when the edges are set but the center still jiggles slightly like Jell-O. Cover edges with foil if they brown too quickly.
  7. Remove from oven and place on a cooling rack. Cool completely for at least 2-3 hours before slicing to allow the custard to set.

Notes

Ensure eggs and cream are at room temperature for better emulsification. Do not overmix the batter to prevent cracks. The pie must cool completely before slicing to set properly. It tastes better the next day. For a gluten-free option, use an almond flour crust. For dairy-free, substitute heavy cream with full-fat coconut cream.
