  • 1 teaspoon sea salt flakes (plus more for finishing)
  • ½ teaspoon cinnamon (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper or a silicone mat.
  2. Clean the pumpkin seeds: Separate seeds from pumpkin guts, rinse in a colander under cold water, removing any clinging pulp.
  3. Dry the seeds completely: Spread rinsed seeds on a clean kitchen towel or paper towels, pat dry, and let air dry for about 5 minutes.
  4. Par-roast the seeds: Spread dried seeds in a single layer on the prepared baking sheet. Roast for 8 minutes, stirring halfway through, until just starting to turn golden and smell nutty.
  5. Make the maple glaze: While seeds roast, combine melted butter (or oil), maple syrup, and cinnamon (if using) in a medium mixing bowl. Whisk until smooth.
  6. Coat the seeds: Remove par-roasted seeds from oven. Immediately transfer to the bowl with the maple glaze. Toss well with a spatula until every seed is coated.
  7. Spread and season: Return glazed seeds to the baking sheet in a single even layer. Sprinkle with half of the sea salt flakes.
  8. Roast to perfection: Bake for another 8-10 minutes, stirring once halfway through. Watch carefully toward the end; seeds are done when deep amber and bubbling slightly.
  9. Cool completely: Remove from oven and sprinkle with remaining sea salt. Let cool on baking sheet for at least 10 minutes (they will continue to crisp).
  10. Break apart any clumps: Once cooled, use hands or a spatula to break apart any clusters.
