These chocolate chip cookie bars are a quick, easy, and kid-approved snack perfect for busy school days. They balance a chewy center with lightly crispy edges and are ideal for packing in lunchboxes without the mess of loose cookies.

  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup (227g) unsalted butter, melted and slightly cooled
  • 1 cup (200g) packed brown sugar
  • ½ cup (100g) granulated sugar
  • 2 large eggs, room temperature
  • 2 teaspoons pure vanilla extract
  • 2 cups (340g) semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper.
  2. In a large bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, stir together the melted butter, brown sugar, and granulated sugar until smooth and slightly glossy.
  4. Beat in the eggs one at a time, then mix in the vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  6. Fold in the chocolate chips, reserving a handful to sprinkle on top.
  7. Spread the batter evenly into the prepared pan and sprinkle the reserved chocolate chips over the surface.
  8. Bake for 25-30 minutes, starting to check at 25 minutes. Bars should be golden brown around the edges and a toothpick inserted near the center should come out with a few moist crumbs.
  9. Cool completely in the pan on a wire rack for at least 30 minutes.
  10. Slice into 12 to 16 bars and serve. Store extras in an airtight container at room temperature or in the fridge.

Notes

Melt butter slowly to avoid burning. Use room temperature eggs for better batter consistency. Avoid overmixing to keep bars tender. Use parchment paper for easy removal and cleanup. Check bars early to avoid overbaking and losing the chewy center. Sprinkle extra chocolate chips on top before baking for a melty finish.
