  • 12 oz semi-sweet chocolate chips
  • 8 oz white chocolate chips
  • 1.5 cups candy corn
  • 2 tablespoons unsalted butter
  • 1 teaspoon vegetable oil (optional)
  • 1/2 teaspoon flaky sea salt (for topping)

Instructions

  1. Line a 9×13 inch baking sheet with parchment paper and set aside.
  2. Pop the popcorn to yield 10 cups, discarding unpopped kernels. Let the popcorn cool completely.
  3. In a large microwave-safe bowl, combine semi-sweet chocolate chips, white chocolate chips, and butter.
  4. Microwave on high for 1 minute, then stir. Continue microwaving in 30-second intervals, stirring between each, until smooth and glossy. Add vegetable oil if using.
  5. Pour the melted chocolate over the cooled popcorn and gently fold to coat evenly.
  6. Gently fold in the candy corn, being careful not to break the pieces.
  7. Spread the mixture onto the prepared baking sheet into an even layer about 1/2 inch thick.
  8. Sprinkle with flaky sea salt if desired.
  9. Refrigerate for 20 minutes (or freeze for 10 minutes) until the chocolate is firm.
  10. Break the bark into irregular chunks by hand and serve.

Notes

Ensure popcorn is completely cool before adding chocolate to prevent sogginess. Use 50% power on the microwave if possible to prevent scorching the chocolate. If the chocolate is too thick, add more oil; if too thin, add more chocolate chips. Store in an airtight container at room temperature for up to 5 days or freeze for up to 2 months.
