These whimsical Halloween cookies feature a soft chocolate cookie base topped with a melty peanut butter cup and a candy hatband, perfect for festive parties and quick treats.

  • 1 cup (200 g) granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups (250 g) all-purpose flour
  • 1/4 cup (25 g) unsweetened cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 36 mini peanut butter cups (e.g., Reese’s Miniatures)
  • 36 small orange or yellow candy pieces (M&M’s or candy-coated chocolates)

Instructions

  1. Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.
  2. In a large bowl, cream together softened butter and granulated sugar using an electric mixer or wooden spoon until light and fluffy, about 2–3 minutes.
  3. Add the egg and vanilla extract. Beat until combined; mixture may look slightly curdled.
  4. In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Do not overmix.
  6. Scoop about 1 tablespoon of dough per cookie, roll into balls, and place on baking sheets about 2 inches apart.
  7. Bake for 8–10 minutes until cookies look set but are still soft in the center.
  8. Remove from oven and immediately press a mini peanut butter cup into the center of each cookie.
  9. Place a small orange or yellow candy piece on top of each peanut butter cup to form the witch hatband, pressing lightly to secure.
  10. Let cookies cool completely on the baking sheet or transfer to a cooling rack.

Notes

Use softened butter, not melted, for best texture. Press peanut butter cups onto warm cookies immediately after baking to help them stick without squashing. If peanut butter cups are too cold, warm slightly before placing. Use parchment paper for even baking and easy cleanup. For gluten-free, substitute almond flour with slight quantity adjustment. Candy hatband colors can be swapped for other holidays or seasonal themes.
