  • 1/4 teaspoon salt
  • 1/4 teaspoon baking powder
  • 4 oz (115g) cream cheese, softened
  • 1/4 cup (30g) powdered sugar
  • 1/2 teaspoon vanilla extract
  • 2 tablespoons heavy cream (or full-fat coconut cream for dairy-free)
  • 1/2 cup fresh strawberries, sliced
  • 1/2 cup fresh blueberries
  • 1/2 cup fresh raspberries

Instructions

  1. Preheat your oven to 350°F (175°C). Prepare your pizza pan by lightly greasing it or lining it with parchment paper for easy cleanup.
  2. In a medium bowl, whisk together the melted butter and granulated sugar until smooth. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  3. In a separate bowl, sift together the cocoa powder, flour, salt, and baking powder. Gradually fold the dry mix into the wet ingredients until just combined. Avoid overmixing.
  4. Pour the batter onto your prepared pan and use a spatula to smooth it into a circle about 9 inches in diameter.
  5. Place the pan in the oven and bake for 18-22 minutes until edges are set and center is slightly soft. Test with a toothpick; it should come out with a few moist crumbs.
  6. While the brownie cools, beat cream cheese, powdered sugar, vanilla extract, and heavy cream until smooth and spreadable. Add more cream if needed to reach desired consistency.
  7. Once the brownie is cool to the touch (about 20 minutes), spread the cream cheese topping evenly over the surface.
  8. Arrange the sliced strawberries, blueberries, and raspberries on top in clusters or a pattern for a festive look.
  9. Chill the brownie pizza in the refrigerator for at least 30 minutes to set the topping and let flavors meld.
  10. Slice into wedges with a sharp knife and serve chilled or at room temperature.
